ARNADÍ

INGREDIENTS

  • 1kg pumpkin pulp
  • 1kg sugar
  • 4 egg yolks 
  • 200g ground almonds
  • Grated lemon zest
  • 5-6g cinnamon
  • Toasted pine nuts and almonds

INDICATIONS

First, we put the pumpkin in the oven at 200ºC for one hour. Then, we crush the pulp and put it in a small bag of fabric or net, leaving it hung up all night for it to strain naturally. Next day in the morning we mix the pulp with sugar in the same amounts and the beaten egg yolks. This mixture will be A la mañana siguiente se mezcla la pulpa con el azúcar a partes iguales y las yemas de huevo batidas. This mixture will be cooked for 15-20 minutes stirring continuously. Now, we add the ground almonds, the grated lemon zest and the cinnamon. With the obtained paste we make small cones or pyramids placing it in small clay pots. Next, we sprinkle the toasted pine nuts and almonds on each of them. Finally, we turn on the oven at 150ºC and place the small clay pots inside until the paste is slightly brown.
