MONA CON HUEVO

Mona con huevo

INGREDIENTS

  • 3kg flour
  • 1kg sugar
  • 12 eggs
  • 1 glass of oil
  • Grated lemon rind
  • ¼ kg baking powder pill
  • ¼ kg yeast dough

PREPARATION

Dissolve the baking powder pill in tepid water and mix with the yeast dough so that they ferment. Then place the dough in an earthenware bowl with the eggs and the other ingredients and knead until they are smooth blend.

The longer you knead the dough, the better. If the dough is too soft, add flour so that it can be kneaded.

Leave to stand for two or three hours. The dough should rise and be very spongy.

Once the dough is ready, take small portions of dough that fit in your hands cupped in a bowl-shape and make balls rolling the dough, do not smash it. Place the portions on a greased baking tray in an elongated or round shape. Put a boiled egg in the middle of each portion and use two strips of dough to fasten them. Cover the dough and wait until it rises again.

Bake in the oven at 180ºC. Once they are removed from oven, coat with egg and sprinkle sugar while they are still hot.

This recipe is for great amounts of “monas” since, in the past, people did not have their own ovens at home and had to bake in big shared ovens. This recipe is for 12 to 14 “monas”. To prepare at home, divide the total quantity of ingredients in half or one-third.
