ALMOJÁBENAS

Almojabenas

INGREDIENTS

  • 1 cup of olive oil
  • 2 ½ l water
  • ½kg strong flour
  • 8 eggs
  • Parsley
  • 500g sugar

PREPARATION

- Pour water and oil in a pot and heat. When it begins to boil, add the flour to be scalded and beat thoroughly with a wooden spoon.

- Once the blend is tepid, add the eggs one by one. Wait until the first egg has been absorbed by the dough before adding the next one. The resulting dough should be soft. If it is a bit thick, pour some more tepid water.

- Form medium-sized rolls using two tablespoons and bake the rolls at a low temperature until they are golden brown.

- Then, prepare some syrup with ½ litre of water and 500 grams of sugar. Once the syrup is done, coat the rolls with it. It is recommended to coat them the day before eating.
