HUEVOS MOLE

Huevos Mole

INGREDIENTS

  • 8 egg yolks
  • 1 cup of water
  • 1/4 kg sugar
  • 1 lemon zest
  • cinnamon sticks

INDICATIONS

First we beat the eggs in a glass container with a spoon of water and with a double boiler (bain-marie) until it gets a thick consistency. Then, we remove it from heat and make syrup diluting the sugar in the rest of the water on the stove with the lemon zest and the cinnamon until it gets thick. Once the syrup is warm, we add the egg yolks little by little while stirring. Finally we put the mixture in different cups before it chills and it is decorated with cinnamon.
