GOFIO AMASADO
INGREDIENTS

½ cup of water
- ½ cup of olive oil
- A few pinches of sugar and salt
INDICATIONS
The gofio is mixed with water, fine salt, a bit of sugar and olive oil until we get dense dough. Then we shape it into a cylinder and we cut it into slices.
ESCALDÓN DE GOFIO
INGREDIENTS
- 1 litre of strained fish broth
- ¼ kg gofio (roasted maize)
INDICATIONS
We put the gofio on a platter con with a twig of peppermint and we add a boiling broth while stirring to avoid lumps. We can also cook it with vegetable broths or other stews.
