CONEJO AL SALMOREJO

Conejo al salmorejo

INGREDIENTS

  • 1 rabbit cut up into pieces
  • 2 cloves of garlic

  • 1 hot pepper 

  • 1 glass of white wine

  • 3 spoons of vinegar

  • 1 glass of olive oil

  • Paprika, cumin and salt (up to your taste)

INDICATIONS

The rabbit pieces are placed on a platter. We mash the garlic, the pepper, the cumin and the salt all together, then we add the vinegar, the wine, the olive oil and the paprika, and we mix it all. This mixture is added the meat to season it and we leave it all soaked for it to soften up during the night.

The next day, we fry the rabbit meat and place it in a clay pot with the seasoning and we warm it up on a low heat. This dish usually goes with “papas arrugadas” (boiled potatoes).
