PAPARAJOTES
INGREDIENTS: (FOR A DOZEN PAPARAJOTES):):
- 4 eggs
- 100 gr offlour
- 100 gr. of sugar
- 4 dl of milk
- 4 dl of water
- ¼ l of olive oil.
- lemon skin
- 1 teaspoon of ground cinnamon
- 12 lemon leaves
- 100 gr.of sugar
PREPARATION:
- Boil the milk and let it cool. Beat the egg whites until firm peaks form.
- Mix in a bowl the water, milk and egg yolks, adding flour gradually and then the lemon zest, cinnamon and egg whites until stiff.
- Let stand about 30 minutes.
- Insert the lemon leaves into this mixture.
- Heat olive oil in a pan and fry the lemon leaves until golden.
- Drain on paper towels, place in a bowl and sprinkle with sugar and cinnamon.
