OLLA GITANA
INGREDIENTS:
- ¼ kg of chickpeas
- ½ kg of potatoes
- ¼ kg of green beans
- ¼ kg of pumpkin
- 1 ripe tomato
- 1 onion
- Oil, water, salt, paprika, saffron and mint
PREPARACIÓN:
- If the chickpeas we used are dry then soak them in water twelve hours the day before, but if they come canned they can be cooked at any time.
- Clean and slice the pumpkin, green beans, potatoes, onions and tomatoes separately.
- In a pan prepare the fried onion and tomato, and add a teaspoon of paprika when browned.
- In a pot with water add the chickpeas and green beans, potatoes and pumpkin. Once ready, add the sauce, some saffron, garlic and cumin chopped,in a mortar with a little dried mint and salt.
- Simmer between 10 and 30 minutes depending on the pot as you use
- It is also possible to add pears.
