ROSQUILLAS DE SAN ISIDRO

INGREDIENTS

  • 250g flour
  • 4 eggs
  • half a cup of anisette
  • 1 lemon zest
  • 100g sugar
  • Half a teaspoon of baking powder
  • 1 teaspoon of anisette
  • Olive oil (to your taste)

INDICATIONS 

First we put 6 spoons of olive oil on a frying pan on low heat for 10 minutes adding the lemon zest. After that time, we remove the lemon zest and put the frying pan off the heat for the olive oil to chill. On another frying pan we start to toast aniseeds while stirring them. Then, we put them in a mortar and mash them until they turn into dust.
Next, we beat 3 eggs with sugar until they are foaming, when we add the fried olive oil, the aniseeds, the anisette and the sifted flour with leavening. We mix it all together until we get uniform dough (if necessary, we will add some more flour) and leave it covered with a cloth for 1 hour in the fridge or in a cool place.

Now, we oil our hands and divide the dough into 12 parts, forming balls with each of them and making a hole in the middle of them to shape them into donuts.

Then, we oil an oven tray and put the donuts on separate, and brush them with the remaining beaten egg. Finally, we heat the oven and bake the donuts on medium until they are well golden.
