FAVES A LA CATALANA

Faves a la catalana

INGREDIENTS (FOR 6 PEOPLE)

  • 1kg tender peeled beans
  • 400g black butifarra (Catalan sausage ideal for this dish)
  • 200g bacon
  • Salt
  • Pepper in grains
  • 1 bay leaf, a small branch of thyme
  • 2 big spoons of meat broth
  • 1/2 small spoon of sugar
  • Olive oil 
  • 2 cloves of garlic
  • 1/2 small spoon of sweet paprika
  • 1 glass of anisette or moonshine
  • 1 big onion
  • 3 ripe tomatoes
  • 1 small branch of fresh mint

INDICATIONS

- First, we separate the beans (we peel them, taking out the small beans), we grind the garlic, the onion and the tomatoes.

- We cut the bacon in strips (with a finger size) and stir-fry them with olive oil. Once the ingredients are lightly fried, we put them all in a saucepan, and now we will add the ingredients and cook the beans. 

- In the same olive oil used for the bacon, we stir-fry the garlic with the onion on low heat, and when it is lightly fried we add the tomato and leave it on low heat for 10-15 minutes.

- We put everything in the saucepan together and leave it fry for 10 minutes. 

- Then, we add the meat broth, the anisette, the herbs, the salt, the pepper and the sugar depending on our taste or preferences. We put the lid on and leave it cook for 10 minutes. 

- Now, we add the butifarra and leave for 20 more minutes boiling. After that time, we take out the butifarra and put it apart for later (if not melted).

- Finally, we take out the herbs, we cut the butifarra and serve it with the beans.
