OLLETA ALICANTINA

INGREDIENTS

(for 4 people)

  • 750 grams of red beans
  • 250 grams of wheat
  • 1 kg. of stalk
  • 1 kg. of pork ribs 
  • 500 grams of potatoes
  • ¼ de liter of extra virgin olive oil
  • an onion
  • saffron
  • salt

 

PREPARATION

- Chop the wheat after having it soaked so you can strip the skin. Put a pot of water to boil and cook the beans, wheat and stalk.

- Fry the chopped onion and add it to the pot. Add the pork meat, diced potatoes, salt and saffron.

- Let simmer and stir occasionally until cooked as desired.
