MONA DE PASCUA (EASTER "MONA")

Mona de pascua

INGREDIENTS

  • 3 kg flour
  • 12 eggs
  • 1l. olive oil
  • half kg of sugar
  • grated rind of one lemon
  • 125 gr of baking powder pills
  • 125 gr of natural yeast
  • tepid water

PREPARATION

First, the baking powder pills are dissolved in tepid water and a little flour. Then yeast is added and the mixture is left to ferment.

The eggs are beaten in a deep bowl and lemon rind, flour and oil are added. Mix thoroughly into dough. Once the yeast has fermented, it is added to the dough and kneaded. The dough is left to stand from 2 to 3 hours.

After this period of time, the dough is thoroughly kneaded again and rolled into oval or round shapes –adapt to own taste. The “monas” should be shaped on wafers or previously greased oven paper.

Then the “monas” (dough balls) are coated with beaten egg and can be decorated with boiled eggs or even be dyed in colour. They can also be decorated with egg white, beaten until stiff, using a piping bag. Colourful aniseed candies and, most importantly, sugar can be sprinkled over the dough.

Finally, the “monas” are placed on a baking tray to bake for 30 minutes at 180ºC.
