 ALICANTE STYLE FIDEÚA

Fideuá

INGREDIENTS

  • 1/2 kg. fish mix (fish heads and small size fish used for broth flavor)
  • 1/2 kg. tuna cut into pieces
  • 1 tomato
  • 2 ñora (spicy red pepper)
  • 6 cloves of garlic
  • 1/4 kg  small squids
  • 3 red peppers cut into strips
  • 375 gr. “fideúa” (short and thick noodles)
  • saffron
  • olive oil
  • salt

PREPARATION

 Boil the fish mix in water on low heat with a bit of oil and two cloves of garlic.

 Strain the broth once done and discard the fish mix.

Sauté the "ñora" peppers, then the tomato and red pepper strips, separating these last ones on a plate.

Crush the "ñora" peppers, garlic and seasoning in a mortar and set aside.

Flour the tuna (optional), sauté and set aside.

Pour the frying oil into the paella pan and pass the noodles by it over low heat.

Add the crushed mix, saffron and small squid.

Add the broth from the fish mix and boil for 15-18 minutes.

Add the pepper strips and tuna pieces at the very end. The noodles should be soupy.
