COCA BOBA

Coca boba

INGREDIENTS

  • ½ cup of flour 
  •  ½ cup of sugar
  • half glass of olive oil
  • grated rind of a big lemon
  • 3 eggs    
  • packet of "Royal" baking powder
  • 1 plain yoghurt
  • preheat oven to 180ºC

PREPARATION

- Beat 3 eggs, add yogurt and, while constantly stirring, add flour gradually. Then add sugar and, finally, oil.

- Stir the mix until smooth and then add baking powder.

- Line the base of a mould for “cocas” (made of tinplate, rectangular and 35 x 25 x 3 cm size approximately) with greased oven paper or aluminium foil and fill it with the dough.

- Sprinkle lightly with sugar.

- Bake at 180ºC for 30 to 40 minutes. To know when the dough is perfectly baked, prick it with a toothpick or fork and if it comes up dry and clean, that means the dessert is ready.
